Black Bean Quinoa Burgers

Ingredients

  • 1/2 cup quinoa
  • 1 can of black beans
  • 1/4 cup sweet corn (frozen or fresh)
  • 1 small sweet onion
  • 1/2 roasted red pepper (canned) chopped
  • 2 garlic cloves
  • 2 tsp. dry seasoning
  • 1 tsp. red pepper
  • whole wheat hamburger buns
  • vegan sliced cheese (I used cheddar flavored)
  • avocado

1. Prepare the quinoa

  • In a saucepan, combine quinoa with 1 1/2 cups of water
  • Season with salt and whatever else you want
  • Bring it all to a boil
  • Cover, reduce the heat, and let it do it’s thing for a bit
  • After 15-20 minutes, or whenever all the what is absorbed, your quinoa is done!
  • Set it aside

2. While that’s happening…

  • Chop your onion
  • Mince your garlic, which really just means squish the crap out of it with whatever you can find
  • Combine onion and red pepper in a small skillet
  • Use the oil from the pepper to sautĂ© the whole mess
  • Once onions soften, add garlic and a bit more of that oil from the pepper jar
  • Add the seasoning
  • Stir in 3/4 cup of the beans
  • Add 1 1/2 cups of water
  • Cover and let it simmer for 10 minutes or until the water is gone

3. Almost done! (sort of…)

  • Add 3/4 cup of the cooked quinoa to the bean mixture
  • Use a fork to mash everything together (this is where a food processor would have been nice)
  • Stir in the remaining quinoa and remaining un-mashed beans
  • Stir in the corn
  • season with salt and pepper (if you haven’t already over seasoned in previous steps)
  • Let it all cool

4. Burger time at last!

  • Preheat your oven to 350 degrees F
  • Use grape-seed or olive oil to grease a pan
  • Shape your bean burger mixture into patties (I came up with 5, yours may vary)
  • Let the burgers cook for 30 minutes or until the top is crispy
  • Place your burgers on your delicious whole wheat bun and top with avocado slices, vegan cheese, and whatever else you want!
  • Yum!
